Dessert for Breakfast
Cereal is a breakfast basic but it isn’t exactly decadent – until now. This delicious blend is somewhere between dessert and granola. It’s easy to make and you can add in some of your favorite flavors or mix ins to make it your own. Try it on yogurt or ice cream as well!
I highly recommend using Lyle’s Golden Syrup, this luscious cane syrup has a full bodied flavor that can’t be matched. If you can’t find it you can substitute honey or maple syrup. Mini marshmallows – ideally homemade are my add in of choice but possibilities abound. Look around your cupboard and be inspired, try coconut flakes or dried fruits.
Preheat oven to 350
- In a large mixing bowl toss together the puffed rice, oats and coarsely chopped nuts (I like a mix of pecans and hazelnuts). Gently work in the honey, syrup and vanilla until everything is coated.
- In a small bowl stir together the sugar, salt and cinnamon. Add the sugar mixture to the cereal and mix again.
- Line a large baking sheet with parchment paper and spread the cereal out in an even layer. You may need to bake it in 2 batches. Bake for 8- 10 minutes at 350.
- Once the cereal has cooled break up any large chunks and toss in the mini marshmallows or any other mix-ins you’d like. Store in an airtight container for up to a month.
