Green Salad with Creamy Avocado Dressing

Creamy avocado dressing can make any meal feel decadent. This simple salad is easy to make and it's yummy enough to make for your lunch or to serve for brunch.
Green Salad with Creamy Avocado Dressing

Spring is finally here (although no one seems to have told the weather) and I can’t wait to enjoy tons of fresh veggies. In the meantime this salad can be made year round and the avocado dressing makes it feel like a gourmet meal.

I’m so excited because this recipe is featured on The Whole Tara, one if my favorite health and wellness sites!

I used Arugula and Spinach for the greens but anything is fine, same with the radish – I love the look and lightly spicy flavor of the watermelon radish but any kind will do.

DSC03254This salad makes one big lunch-worthy salad or enough for 3 or 4 as a side dish.

  1. Thinly slice the cucumbers.DSC03277
  1. Thinly slice or chop the green apple and the radish.
  1. Toss the greens of your choice (in my case, spinach and arugula), cucumber, apple, radish and some herb leaves together in a large bowl.DSC03298
  1. In a food processor, blender or even by hand – combine half a ripe avocado with olive oil, lime juice, apple cider vinegar, parsley and mint. Pulse a few times and add salt and pepper to taste. I like the dressing on the creamier side, but feel free to thin it with a little more lime juice and a few teaspoons of water.
  1. Drizzle the salad with the dressing and enjoy!
