Green Salad with Creamy Avocado Dressing
Spring is finally here (although no one seems to have told the weather) and I can’t wait to enjoy tons of fresh veggies. In the meantime this salad can be made year round and the avocado dressing makes it feel like a gourmet meal.

I used Arugula and Spinach for the greens but anything is fine, same with the radish – I love the look and lightly spicy flavor of the watermelon radish but any kind will do.
- Thinly slice or chop the green apple and the radish.
- Toss the greens of your choice (in my case, spinach and arugula), cucumber, apple, radish and some herb leaves together in a large bowl.
- In a food processor, blender or even by hand – combine half a ripe avocado with olive oil, lime juice, apple cider vinegar, parsley and mint. Pulse a few times and add salt and pepper to taste. I like the dressing on the creamier side, but feel free to thin it with a little more lime juice and a few teaspoons of water.
- Drizzle the salad with the dressing and enjoy!
