Key Lime Cheesecake Bars

This delicious spin on cheesecake is perfect for a Seahawks Superbowl spread.

For the cookie crust:

Preheat the oven to 325 degrees.

  1. Crush up cookies (Graham crackers are always a good bet, but any crunchy cookie works).
  2. Mix the  cookie crumbs with a little salt and melted butter (for extra deliciousness brown the butter).
  3. Prep a baking dish by coating it well with non-stick spray. Press the crumb mixture into the bottom and sides of the baking pan and bake at 325 degrees for 5 minutes.DSC01950

To make the cheesecake filling:

  1. In a large bowl (or in a stand mixer) cream together the cream cheese, sugar and vanilla. Blend until the mixture is light and fluffy.
  2. Add the eggs one at a time – stir for a few seconds in between each egg. Add the sour cream, heavy cream and the lime juice.
  3. If you want to use it, add some green food coloring until it reaches your desired shade of green.
  4. To bake the cheesecake place your baking dish with the cookie crust into a larger roasting pan. If you don’t have one, just put a large dish next to it in the oven. Fill the larger pan with about 1-2 inches of water.DSC01961 This will create moisture in the oven and prevent the cheesecake from cracking.   5. Bake at 325 for 30 minutes and then turn off the oven and let the cheesecake sit  in the cooling oven for another 20 minutes. Take the cheesecake out of the oven and let it come to room temperature. Refrigerate for at least an hour.  Once the cake is chilled cut it into bars or serve like a normal cheesecake.DSC02109

To decorate:

  1. Make a glaze by combining a 1 cup of confectioner’s sugar with 1-2 Tbsp. of Milk. Add blue food coloring if desired.
  2. Place the glaze in a food storage bag, cut the tip off the bag and use it to pipe yard lines onto the “field”.DSC02101
