Apple Cobbler Stacks

I love making these apple cobbler stacks when I want something sweet and healthy.
Apple Cobbler Stacks


  1. Slice an apple into long, thin vertical strips.  When you reach the core, flip it around and slice it from the other side.
  2. Put your apple slices in a bowl and squeeze some lemon juice on them, to keep them fresh.  Follow that by mixing in the cinnamon, nutmeg and vanilla extract make sure the apples are coated in the seasonings.
  3. Coarsely chop some almonds and cashews. Finely chop some dates, removing their pits if they haven’t already been pitted.  Mix your nuts and dates together to form a slightly sticky mix.
  4. Layer your apple slices with your nut and date mixture in an oven safe bowl and heat your cobbler at 350 degrees for 15-20 minutes.
  5. Allow your apples to cool for a few minutes before eating and then sprinkle on some coconut flakes.
