Avocado toast 2 ways

Here are two ways to turn avocado toast into heartier fare- try adding a poached egg or some over roasted tomatoes, honey and goat cheese.

  1. Begin by slicing your avocado in half and mashing it with some salt, pepper and lemon, add a dash of hot sauce if you like heat. Spread your mixture on a piece of toast.

First variation:

Top your toast with oven roaster tomatoes, a little goat cheese and a drizzle of honey.

I like to slow roast cherry tomatoes by piercing the skin with a sharp knife, tossing them with a little olive oil and baking them at 275 degrees for roughly an hour.

Second variation:

Add a poached egg to your toast and sprinkle on a little red pepper flakes. You can find my egg poaching tutorial here.
