Chia Chai Pudding
This pudding taste like dessert – it makes a great breakfast or snack because it’s full of protein and fiber. Chia seeds are a great source of nutrients and will fill you up until lunch, but more importantly they taste great and give this “pudding” it’s creamy consistency.
I like to add Chai Tea for a big boost of flavor, if you don’t have chai tea on hand try using these spices for a similar taste – 1 tsp. of cinnamon and 1/2 tsp of allspice, nutmeg, ginger and cardamom. If you like your breakfast on the sweeter side you can add a spoonful of honey to the mix, but I find that the almond butter, almond milk and the spices are enough for me.
- In a large bowl, stir the almond butter to give it a smooth consistency. Slowly pour in the milk of your choice. I like a mix of coconut milk and almond milk. Whisk until the milks and almond butter are totally incorporated.
- Stir in the vanilla extract and chai tea. You can use a chai mix or your own blend of spices. Lastly add in the chia seeds and give another good stir.
- Pour the mixture into a jar or container. Refrigerate overnight.
Serve by itself or top with almonds, granola and/or a pinch of cinnamon.
