Clafoutis is a classic french dessert, that is light, fluffy and fruity. It's easy to make and uses ingredients you probably already have on hand.

Clafoutis is a rustic dish made with fruit – it’s sort of a cross between a pancake and custard. It’s delicious and it’s my go to dish when I have limited ingredients and no baking tools. It’s the perfect dish to make for a brunch or dessert when you don’t want to spend much time in the kitchen.

Any kind of fruit will work well, berries are traditional  but stone fruit or even tropical fruit would work. Try different combinations and enjoy!

  1. Begin by buttering a baking dish placing the fruit on the bottom of the pan.  I used blueberries, plums and cherries, if you use cherries make sure to pit them!
  2. Make the filling by whisking together the dry ingredients, sugar, flour and salt.
  3. Add in the wet ingredients lemon zest, vanilla, milk and eggs.  Whisk thoroughly to incorporate everything together.
  4. Bake it at 350 degrees for 20-25 minutes or until the clafoutis is puffed and golden brown. Dust with powdered sugar and serve warm.
