French Onion Soup

French onion soup is my favorite winter comfort food - it's warm, satisfying and super cheesy. You can customize it by adding different stock, different vegetables and playing around with the cheeses.

Once you’ve prepped your ingredients the soup is really quite simple to make, and so yummy.

  1. Slice the onions, and get all your ingredients together.
  2. Melt the butter with the onions, salt, pepper and sugar – cook over medium to low heat. Tie the thyme together with kitchen twine and add to the mix.
  3. Allow the onions to brown – about 25mins. You’ll know they’re ready once they’re translucent.
  4. Add flour and stir for about 1-2 mins. Add the vermouth and white wine and allow the alcohol to cook down – this should take just a few minutes.
  5. Add the broth, and a little salt and pepper to taste.
  6. While the soup cooks, slice baguette thinly. Slice and/or grate the cheese.
  7. When ready to serve, ladle the soup into oven proof bowls and top with one or two slices of bread and a generous helping of gruyere topped with a sprinkle of parmesan.
  8. Broil for 3-5 minutes and serve! I like to add a sprinkle of chopped parsley for a bright fresh flavor at the end.
