Green Eggs and Ham
I just learned that Dr. Seuss day – a) exists and b) is right around the corner – so it’s time to celebrate by enjoying some green eggs and ham.
They’re so easy to make and you can whip up a whole tray for a brunch in minutes. It’s also nice to prep a few before bed, refrigerate overnight and pop them in the oven when you wake up for a quick, healthy and portable breakfast. I also highly recommend adding a little grated cheese to the mix – yum!
- Line each cupcake mold with sliced prosciutto. Feel free to double up so there aren’t any gaps.
In your food processor mix together the pesto, basil leaves, salt, pepper and eggs. You can also just chop the basil leaves and then whisk by hand.
- Pour some green eggs into each individual ham cup.
- Bake at 350 degrees for about 8-10 minutes. They bake up quickly, so make sure to keep an eye on them while they’re in the oven. I used a mini cupcake pan, If you are using a regular size cupcake pan they will take closer to 15-18 minutes.
- Sprinkle some fresh basil on top and enjoy your Suessical treat – here, there and anywhere!
