Spinach and Artichoke Stuffed Sweet Potatoes

Spinach and Artichoke Stuffed Sweet Potatoes

I love potato skins, but they can be a lot of work – turning one large potato into a stuffed potato is a lot simpler. Using high quality ingredients and using sweet potato makes it healthy as well as scrumptious. Try it!

  1. Wrap a sweet potato in tin foil and cut a few slices along the bottom.  Bake it in the oven at 350 degrees for 30 to 40 minutes. Raise the oven temperature to 425 degrees.
  2. Once the potato is fork tender allow it to cool a few minutes before slicing half way through the middle and then gently widening the slice.  Use a spoon to scoop out about half of the sweet potato.
  3. In a medium bowl combine the scooped sweet potato, coarsely chopped spinach, artichoke, grated cheese ( I used Gouda and Swiss but any kind is fine) and salt and pepper.
  4. Mix all the ingredients together and then stuff the mixture back into the sweet potato.
  5. Sprinkle a little cheese on top and bake the potato an additional 2-5 minutes in a 425 degree oven, until filling is warm and the cheese is melted.
