Squash & Sage Hummus
This is a light but winter-y take on hummus. I always have Butternut Squash so I roast it, mash it up a little and throw it in, but you can buy squash puree if that’s easier. If you roast your own don’t worry about the puree consistency the food processor will take care of it for you!
- Blend the lemon juice and Tahini paste together in a food processor.
- Add in the rest of your ingredients except for the chick peas – the sage leaves, orange zest, cumin, salt, half a clove of garlic (I don’t like a lot of garlic so this is perfect for me, but feel free to add more) and the butternut squash purée. Blend those together for a few seconds.
- Once everything is combined, add the chick peas and pulse the mixture together a couple of times. The hummus should be smooth with a bit of texture. Serve with some veggies or pita chips!
