Sunchoke, Parsnip and Chestnut Soup

This blended soup makes for a cozy evening at home! Its nutty, earthy and slightly sweet taste will help you love these cold nights.
Sunchoke, Parsnip and Chestnut Soup
  1. Prep your vegetables, chop and peel them as needed
  2. Heat your chopped onions with a little olive oil for about 5 minutes. Keep them on low heat, you want to sweat them not brown them.
  3. Add the rest of your vegetables – the parsnips, apples, sunchokes and chestnuts to the pot, along with some salt, pepper and dried herbs.
  4. After heating your mixture for about 5 minutes, add your vegetable or chicken stock.  Cook everything on medium heat until the vegetables are fork tender, about 15 minutes.
  5. Blend your soup using an immersion blender or work with small batches in a regular blender.  Once everything is blended let your soup simmer together for at least another 5 minutes.
  6. Serve your soup with some browned butter for richness and parsley for brightness.  Enjoy!
